The Sailing Boat Restaurant opened on July 11, 1996, and has grown into a North State success. The name 'Sailing Boat' was used for the restaurant because George Yu and his brothers, Tony and David, wanted to utilize a popular symbol from their homeland. The sailing vessel, the official sign of the Hong Kong tourist attraction, was an appropriate choice. Sailing boat's success has been based on family history. George Yu’s brother operated a prosperous restaurant business in Hong Kong for more than 20 years. “In Hong Kong, business is really competitive,” Yu said, “If your food's no good, you're out of the game. Your food has to be as fresh as possible.” When George Yu was a boy he remembers fresh food required traveling to the market twice a day for vegetables and fish. George and his brothers have brought that same fresh philosophy to the Sailing Boat. Their kitchen is usually staffed by nine people. “Lots of restaurants prepare things ahead of time, but when the food comes in every day you need more people (preparing),“ Yu said “If it's not fresh you lose a lot of the original flavor. That's especially true with Chinese food.” Limit one per customer. Expires 12/31/08
